MINI CHORIZO FRITTATAS


I bought a new silicone mini tart tray the other day so decided to test it out by making some mini frittatas. I had some chorizo in the fridge so decided to make some chorizo frittatas. They were so quick and easy to make and they tasted delicious.

All I did was sauté a large onion then add some chopped chorizo.


Then I gently fried until soft and seasoned with good sea salt and pepper.


I spooned the mixture into the tray then poured over with beaten eggs and double cream mixed together.


Then I just popped the tray in the oven at 180C for approx 15 minutes or until golden brown on top. You will see the individual fritattas will be coming away from the sides.


And there you have it, a perfect and delicious bite sized chorizo fritatta bursting with flavour! These are perfect to serve at a party if you want to get away from pastry.


You could of course adapt these any way you want. You could add some sautéed potato to make it a bit more Spanish. You could add some cheese, herbs, you could substitute the chorizo for smoked pancetta…you could do anything you want!
